100% Iberico Acorn-Fed Lomo by Covap Weight Aprx 1.2 lbs Iberica Acorn-Fed Pork, species, Gluten Free Covap acorn-fed lomo is a high-quality sausage originating from the COVAP cooperative, located in the Los Pedroches region, in the province of Córdoba, Spain. It is made using acorn-fed Iberian pork, from pigs raised freely in pastures and fed mainly with acorns during the montanera season. Covap acorn-fed loin is obtained from the lean part of the Iberian acorn-fed pork, which is marinated with salt and a mixture of selected spices, such as paprika, garlic, oregano and other aromatic herbs. Afterwards, it is left to marinate for a period of time so that the flavors integrate. Once marinated, the loin is stuffed in natural casing and undergoes a controlled curing and drying process. During this time, the Covap acorn loin acquires a firm texture and a characteristic flavor. The Covap acorn loin is distinguished by its intense flavor and softness in the mouth.
